Ingredients:

4 bone-in, skin-on chicken thighs (or any chicken pieces of your choice)

4 bone-in, skin-on chicken drumsticks

For the Peri Peri Sauce:

4-6 red chili peppers (adjust according to your spice preference)

4 cloves garlic

1 small onion, roughly chopped

1 red bell pepper, seeded and roughly chopped

Juice of 2 lemons

Zest of 1 lemon

1 tablespoon smoked paprika

1 tablespoon sweet paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon ground coriander

1 teaspoon ground cumin

1/4 cup olive oil

Salt and pepper to taste

For Serving:

Cooked rice or potatoes

Lemon wedges

Chopped fresh parsley or cilantro (optional)

Instructions:

Prepare the Peri Peri Sauce:

In a blender or food processor, combine the red chili peppers, garlic, onion, red bell pepper, lemon juice, lemon zest, smoked paprika, sweet paprika, dried oregano, dried thyme, ground coriander, ground cumin, olive oil, salt, and pepper.

Blend until smooth and well combined. Taste and adjust seasoning if needed. Set aside.

Marinate the Chicken:

Place the chicken thighs and drumsticks in a large bowl or resealable plastic bag.

Pour the peri peri sauce over the chicken, ensuring that each piece is well coated. Massage the sauce into the chicken pieces.

Cover the bowl or seal the bag and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to penetrate the chicken.

Cook the Chicken:

Preheat your grill to medium-high heat, or preheat your oven to 400°F (200°C).

If grilling, oil the grill grates to prevent sticking. If using an oven, line a baking sheet with parchment paper or foil.

Place the marinated chicken pieces on the grill or on the prepared baking sheet.

Grill or bake the chicken for about 30-35 minutes, turning occasionally, until the chicken is cooked through and the skin is crispy and charred in spots. The internal temperature of the chicken should reach 165°F (75°C).

Serve:

Once the chicken is cooked, remove it from the grill or oven and let it rest for a few minutes.

Serve the peri peri chicken hot with cooked rice or potatoes.

Garnish with lemon wedges and chopped fresh parsley or cilantro, if desired.
